OVERALL ASSIGNMENT: • Responsible to plan organize the Pastry and Bakery section of Hotel Novotel Saigon centre. • To give a complete information to the staff under his/ her supervision. • To delegate and give appropriate direction to his/ her senior staff. • Ensure a high standards of quality in Pastry and Bakery production. • Reports to the Executive Chef on daily basis by filing the log-book and attending the daily briefing. • Takes charge of kitchen operation in the event executive chef and or sous chef are absent for a period of time. OPERATION ASSIGNMENT: • Plan, organize. promotional event in the throughout hotel Novotel Saigon centre • Responsible for merchandising of the shop by having creative show piece and decoration. • .Ensures a consistency in standard, set up, and refiling of the Lobby bar café, breakfast buffet, executive lounge • Keeps a record of all pastry events with sales analysis, comments, and debriefing minutes. • Provides recipes standard and pictures of all new creations • Ensures that good quality ingredients are used to confection cakes and pastry. • Reinforces cleanliness and hygiene within the pastry and bakery department • Maximizes productivity, by motivating his/her staff for creativity. • Make sure that all his/her staff is aware of all activities in the hotel and with our main competitors. • Appraises and evaluates the staff under his supervision on a monthly bases

Yêu cầu công việc
Must have held a pastry chef position before in 4 or 5 star hotel or was sous chef of pastry • Worked in 4 or 5 star international brand hotels pastry department • Able to manage a team of pastry chefs and bakers • Have hands on approach • Able to train staff and implement new recipes • Understands HACCAP • Have knowledge of buffet set ups and Al a carte desserts • Understands new concepts and styles of desserts and pastries • Able to produce chocolate work • Have a good understanding and able to produce breads and classic pastries
