Mission
Under
the general guidance and supervision of General Manager, with full awareness of
all established hotel policies and procedures, responsible for product/ production of
food, co-operation with the F&B Manager to assist with training and
developing culinary employees in all areas.Responsibilities
- Supervision of day to day operation of the kitchen, including but not limited to staffing, equipment, sales and costs;
- Work with the Food & Beverage Manager in setting appropriate incentive schemes for the outlet teams and the preparation of annual operating budgets;
- Control of the production, preparation and presentation of all food items to ensure highest quality at all times as required;
- Work with the Purchasing Manager to control all of the supplies and completion of market lists in accordance with PRINCESS D'ÂNNAM Resort & Spa quality and quantity standards. Checks perishable food items received and refused back to the supplies;
- Train and develop each outlet chef so that they are able to operate independently and creatively within their own profit centers. To control and ensure that each outlet chef plans and implements effective training programs for their respective kitchens and consistently maintain discipline following hotel guidelines procedures;
- Attends to guest complaints, requests or inquiries regarding food service quality and immediately takes all required to act prompt;
- Completes daily kitchen inspection; checks overall kitchen appearance, the repair of its fixtures, fittings and operating equipment, initiates maintenance request as necessary. Report to F&B Director / General Manager immediately if there is any fault of the equipment;
- Daily checks all store requisitions and ensures orders are filled on a daily basis, the material and all items on the feature menu are available;

Yêu cầu công việc
- 2-3 years of experience at similar position in 3-5 star hotel/ resort;
- Proficient in Western/Asian/Vietnamese kitchen;
- Good communication in English;
- Good knowledge in food safety & hygiene;
- Good experience in menu designs & creations;
- Good leadership & coaching skill.
