Ÿ  Fully understand and embrace Six Senses company vision and values and its application in all tasks associated with the host’s duty.

Ÿ  Adhere to all Six Senses brand standards ensuring successful communication across all levels of the operation.

Specific

Ÿ  Ensure that the restaurants and bars are prepared for service at the designated times and that all pre-service activities by restaurant management is carried out.

Ÿ  Ensure the prompt and efficient service of meals and beverages set by the resort’s required standards.

Ÿ  Fully understand the team goals and objectives, ensuring that appropriate duties are carried out to achieve the targets.

Ÿ  Lease with guests ascertaining their food and beverage requirements and coordinating their requests through the outlet.

Ÿ  Have a full knowledge of menus and specials of all outlets. To be able to recommended and up sell.

Ÿ  Ensure that all hosts provide courteous and professional service in a friendly manner at all times.

Ÿ  Make every effort to ensure the comfort and enjoyment of guest’s food and beverage requests throughout service.

Ÿ  Ensure you have a good knowledge take order from any Food & Beverage outlet menus.

Ÿ  Confirm that all outlets Head of Departments (HODs) prepare departmental records, rosters and any other paperwork as and when required.

Ÿ  Ensure guest /room charges at points of sales are being managed.

Ÿ  Have a good knowledge of the wine list and be able to recommended wine in absence of a sommelier.

Ÿ  Prepare monthly reports relating to service, breakage, loss and inventories.

Ÿ  Control loss, abuse or breakage of all operating equipment and to ensure correct handling and storage of such items.

Ÿ  Organize daily briefing in the restaurant before each meal period to brief the team on special request, VIP, out of stock, and other requests.

Ÿ  Follow opening and closing duties checklists.

Ÿ  Conduct regular meetings with staff relating to maintaining and improving service, to introduce moral building exercises for food and beverage hosts.

Ÿ  Ensure all hosts behavior is correct and that they are of full knowledge of the products they use and the service that is expected of them.

General

Ÿ  Be present throughout service.

Ÿ  Attend regular meetings and briefings to provide up-to-date information of guidelines, special events, further improvement plans and guest comments.

Ÿ  Ensure the effective and efficient running services of all the outlets.

Ÿ  Provide nine hours of training per month to subordinates and report the progress of their performance.

Ÿ  Have a thorough knowledge of all facilities and services offered by the resort.

Ÿ  Maintain at all times the highest standard of social skills.

Ÿ  Ensure that all “hosts” are aware of their duties and operating procedures within the resort.

Ÿ  Ensure that the standards for food and beverage are being followed and must lead by example.

Ÿ  Complete any other duty assigned by management.

Ÿ  Arrive on time in full uniform in accordance with the company grooming guideline.

Qualifications:

Ÿ  Diploma of college or university completion and knowledge of food and beverage and/or hotel management.

Ÿ  Any courses relating to further knowledge of wine or bartending are also preferred.

Work Experience:

Ÿ  Two years of experience within a luxury hotel or resort operation in one of the following roles: restaurant manager, assistant food and beverage manager or equivalent.

Ÿ  Hospitality experience is essential.

Technical Skills:

Ÿ  Operations of sections, hotel and SPL’s policies regarding food and beverage operations. First aid is preferred.

Ÿ  Beverage terminology, application, operation, wine service, costs, menu development and controlling inventory.

Ÿ  Familiar with food and hygiene codes, policies and procedures.

Ÿ  Very good command over written and spoken English

Ÿ  An offering of local language and their customs is highly encouraged.

Ÿ  Excellent work ethic under pressure

Work Environment:

Ÿ  Heavy lifting of materials up to 20lbs may be required.

Ÿ  Must be able to stand for long periods of time.
