· Be clean, groomed and ready for work 5 minutes before shift
· Approach customers in a friendly, smart, professional and flexible manner - react to different kinds of customers appropriately
· Confidently speak with guests – explaining the Renkon style and recommending food and drink specials (advanced wine and sake knowledge)
· Use the in-depth knowledge of beverages to help guests with beverage choices and introduce new and interesting options
· Tailor food and beverage orders to guests on individual levels
· Maintain and control a section, focusing on perfect table and bar maintenance, managing table returns (helping the host decrease wait times), and following the Renkon flow of service
· Work with style and pay attention to every detail – know perfect service techniques, making it look effortless
· Help colleagues and ask for help when needed, jumping in if someone needs assistance (despite their role or section) while maintaining own section
· Understand how to raise check averages without being pushy or obvious
· Know how to handle cash, deal with credit cards have the ability to cash out
