ORGANISATIONAL STRUCTURE

Reports To: Executive Assistant Manager (EAM)

    Direct Subordinates:           Restaurant Manager, Banquet Manager.


PRIMARY RESPONSIBILITIES

Strategy & Planning

·     Responsible for the development and implementation of the F&B annual business plan and strategies, as well as establishing key performance objectives and plans to ensure the hotel meets its business targets and drives sustainable, profitable growth.

·     Responsible for the conceptual and operational design of F&B guest experience and concepts.

·     To find business opportunities in order to increase revenue, covers, average check in outlets

·     Control and maintain costs and expenses in line with budget.

·      To make recommendations for purchasing of the goods & services balancing price and quality.

·    To liaise with the Sales Department/Marketing to devise promotions and activities to increase business, while maintaining brand standards.

·      Make plans for purchasing equipment required to serve the needs of the business.  

 Operation

Overall responsibility for all operational components of the division to ensure efficiency and effectiveness.

  • Drives high levels of guest satisfaction through the consistent execution of all brand standards, visible operational leadership, and hands-on interaction with guests and associates.
  • Maintain & develop SOPs ensuring they are relevant, up to date, trained effectively and operationally delivered.
  • In conjunction with the Executive Chef, check the food quality, safety and hygiene to ensure standards are maintained in accordance with guest expectation and relevant law.
  • Responsible for all assets, equipment, linen, chinaware, silverware, glassware etc in the F&B department.
  • Control department assets and equipment to ensure they are maintained in the highest order and available to serve the guest at all times.
  • Develop, implement & maintain a review and response for guest feedback with follow-up actions taken
  • Guide and attend daily operations meetings with the F&B team to plan for immediate operational demands, manage daily and plan for operational challenges, highlight VIP events and follow up on tasks and projects
  • Maintain cleanliness and tidiness in all areas, ensuring compliance with fire safety laws.

 Human Resources

  • Create an environment of support, trust and empowerment that energizes staff to focus on guest satisfaction, allowing for the creation of memorable guest experiences.
  • To plan, develop and implement formal training plans for all F&B staff
  • To identify high potential staff for development and guide them to successful career progression
  • Ensures correct rotation and scheduling for all employees in order to provide full coverage for efficient service and to maximize productivity.
  • Control manning to reduce usage of overtime, casual labour and public holiday working, while maintaining service levels.
  • Control discipline and ensure any mistakes are rectified in the correct manner, with constructive feedback given.
  • Ensure communication of important information to staff is timely and effective to ensure achievement of goals.

Yêu cầu công việc

Education:      A diploma or degree qualification.

                         Fluency in oral and written English

 

Experience:  Previous hotel-related experience desired

 Other:  Good presentation and public speaking skills.

Showing strong initiative and creative skills. 

Good in planning, organizing and co-ordination.
