Mô tả công việc

- Supervises and checks staff planning, purchasing, receiving, storing, issuing, food tests, portion control, cashiering and check continuity, F&B revenue audit, cost and sales potential of food and beverage outlets and month-end F&B inventories.

Check daily Delivery Documents against Purchase Orders / Purchase Requisitions.

- Do Market Survey with Purchasing and Kitchen, before evaluation of quotations obtained by Purchasing

- Do Food Tests (Portion, Yield, Blind, Buffet, Butcher) and Beverage Spot Checks, and investigate variance.

- Verify accuracy and analyze Monthly Food & Beverage Cost Reports, and investigate variances.

- Update information in Inventory system eg: New Inventory Codes and Inventory Par Levels

Yêu cầu công việc

- Knowledge in costing of food and beverage operation

- Familiar with internal systems and procedures

- Language: Good command in oral and written English

- University or College graduate

- Local permit in Accounting

- Additional improvement programs in Finance is preferred

- At least 3 year experience in international class hotel in a similar capacity

- Experience in Materials Control systems is preferred
