Assistant F&B Manager

1. Oversee the implementation of Standards as detailed in the departmental standards and procedures manual.

2. Adhere to opening and closing procedures.

3. Adhere to bill paying procedures

4. Ensure effective shift briefings are conducted ensuring all staff are aware of VIPs, special occasions, daily specials, emphasis on up selling certain products; etc.

5. Personally meet and farewell a minimum of 80% of your customers in a la carte dining hall and 90%of your customers in Private Dining Rooms, walk Private Dining Rooms to the door upon their departure.

6. Propose and discuss menu with Private Dining Room customers.

7. Keep management informed of arrival and departure of VIPs.

8. Get comments from your customers, take immediate actions to comfort angry customers and reports to your superior for anything you cannot handle.

9. Encourage and motivate staff to provide optimum service during all shifts.

10. Share recommendations and guest comments to Master Chef, Vietnamese Restaurant Operations Manager and Food and Beverage Director to reflect current customer profile.

11. Assist to develop and implement Promotions Calendar for F&B product in restaurant.

12. To have a complete knowledge of the Vietnamese Restaurant & Banquet Menus and Wine List and to be able to advise guest if required.

13. Follow through all details stated on special event concepts.

14. Responsible for the implementation and upkeep of Guest’s History Record, using business cards, guest’s comments and preferences.

15. Create positive publicity opportunities

16. Manage customer database and utilize effectively.

17. Up-sell property facilities.

18. Actively pursue cost saving measures.

19. Recycle wherever possible

20. Liaise with Sales Team during tender process to obtain new accounts; Food and Beverage specific；

21. Manage Wage and Beverage cost.

22. Assist in forecasting.

23. Stock control and requisition issuance;

24. Analyze and react to food and beverage statistics through point of sale system and monthly report.

25. Is responsible for the upkeep of repairs and maintenance of Vietnamese Restaurant FF&E and to maintains register for the same items.
