Mô tả công việc

• Hands-on role overseeing all receiving, preparation, cooking and finishing of all dishes for Sunshine Restaurant (The Hotel's Staff Canteen)

• Ensure all meal periods have fresh, tasty and well-balanced meals suited to the tastes and preferences of local Vietnamese team members

• Oversees, trains, develops and organises all canteen staff and assigned chefs on a shift-by-shift basis.

• Ordering, requisitions and stock control for all ingredients, to ensure meals served are within budget, and of the highest quality.

• Responsible for smooth and efficient running of staff restaurant food including hygiene, food handling, temperature control, freshness and taste / quality and consistency of all dishes served

• Present and visible in the staff restaurant kitchen, overseeing, tasting and organising production of all cold food items

• Actively direct, train and develop assigned staff and trainee chefs

• Learn new skills and develop repertoire, techniques and on the job skills by attending training courses and pursuing self development

• Identify issues and areas for improvement and notify these to Sous Chefs

• Actively seek new recipes, dishes, product knowledge and training from colleagues and kitchen management 

• Organise a menu schedule with approval and input from sous chefs. Document all recipes for consistency

• Keep a recipe book or workbook to note recipes and new skills / techniques, and ensure your subordinate staff do the same

Yêu cầu công việc

• Strong knowledge of local Vietnamese dishes and homestyle Vietnamese cooking.

• Experience in cooking local Vietnamese food hygienically, for a similarly busy operating serving up to 300 meals per service period

• Fluent in Vietnamese language, maths, menu planning

• At least 3 years experience in a role with similar responsibility, production volume and food quality 

• Commitment to using fresh food and ingredients prepared to the highest standard 

• Maintains the highest standard of personal and workplace hygiene

 • Experience and ability to lead, manage and develop a team of around 10 people
