Outlet Manager ( Bar Background)

General Purpose

Manage restaurant and bar operations follow standards to bring effectively the superior products and services by create the difference according to policies and procedures accepted by the hotel.

Main Duties

• Propose quarterly a new menu with Signature cocktails and beverage offer following The Secret Con Dao Hotel concepts and management guideline.
• Ensure a consistent quality level of cocktail productions and beverage offer maintaining the beverage costs within the percentage indicated by management and avoiding wastage
• Responsible for monthly stock taking, glassware and bar equipment.
  
• Work with individual Bar Supervisor to create Bar checklist for each shift and monitor on daily operation
• Collaborating with Bar Supervisor on scheduling effectively all the bar shifts.
• Collaborating with Bar Supervisorbefore daily briefing for all upsell beverages item/ out of stock/ specialty
• Ensure that all transfer/ wasted/ spoiled/ consumption form is filled out and distributed in accordance with departmental standards
• Maintains sanitation standards in all areas related to Bar.
• Maximize sales opportunities within the bar department.
• Maximizing event opportunities and financial performance in areas of responsibility.
• Review sales and beverage costs for previous day, resolve discrepancies with Accounting.
• Maximize sales opportunities within the Bar.
• Plan and run promotions together with direct Manager.
• Regularly check storage areas for proper supplies, organization, and cleanliness.
• Development and implementation of new international trends to exceed the expected standards within the industry
• Monitor and maintain cleanliness, sanitation, and organization of assigned work areas.
• Check the quality of beverage offer, cocktail preparation, and techniques to ensure a constant high level of service towards our guests
• Inspect all aspects of the outlet environment ensuring compliance with standards of cleanliness and order and direct respective personnel to rectify deficiencies immediately
• Support operationally team members at Bar area during peak periods or any event requirement
• Responsibility for the new item or menu changes on the Point of sale (POS) terminal.
• Create training program related to Bar
• Ensure a consistent quality level of cocktail productions and beverage offer maintaining the beverage costs within the percentage indicated by management and avoiding wastage
• Complete requisitions to replenish shortages or additional items needed for the anticipated business
• Responsible for monthly stock taking, glassware and bar equipment.
• Creating checklist for each shift and position with Bar Department making sure these are followed constantly by all the team members
• Collaborating with Bar Supervisor on scheduling effectively all the bar shifts
• Conduct pre-shift meeting with staff and review all information pertinent to the day's business.
• Conduct interviews for Bartenders together with HR Department.
• Maintains sanitation standards in all areas related to Bar
• Pro-active on guests' needs, takes quick action to address customer needs with a passionate approach and strives to exceed customer expectation
• Anticipate guest's needs, respond promptly and acknowledge all guests, however busy and whatever time of day.
• Resolve guest complaints, ensuring guest satisfaction.
• Seeks, listens and responds to Guest feedback
• Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately

Full Salary & monthly Service Charge in probation period.

Knowledge & Experience :

Vocational certificate or diploma in hotel management.

At least 3 year experience in Bar Management position in the hotel.

Knowledge of the Beverages market.

Excellent knowledge of international Spirits, cocktails and wines.

Good knowledge and practices of HACCP and food safety guidelines.

Fluent in English communication.

Knowledge of Hotel PMS ( Opera/ Protel/ Smile...) and basic skills of Microsoft Office

Competencies:

Good communication and customer contact skills.

Strong training, problem solving and leadership skills

Able to handle physically demanding workload

Ability to multi-task, work well in stressful & high-pressure situations

A team and individual player.
