* From: March 2018 – present The Spot - 1855 F&B Position: Sommelier The Spot is one of the venure of 1855 F&B which is a holistic dining experience and new social hub at the heart of Singapore’s downtown area, Marina One. Offering an eclectic menu of contemporary European SEA sauce centric with 108 seating covers include cigar lounge and private room. Offering an extensive range of whiskies cigars and over 900 labels of wine around the world from 1855 bottle shop. - Anticipate the volume of business, taking into consideration the peak/low seasons, holidays. - Re-evaluate and restructure the wine list. - Assist in preparing the annual wine sales plan and promotion. - Conducts wine tastings, wine degustation dinners, wine classes and other related activities to enhance the image and to increase revenue. - Conduct wine inventories on a regular basis. - Advise on slow moving items and recommend required action, where and when necessary. - Review wine sales on a regular basis. - Responsible for planning, organizing and delivering training. - Handle guest complains, requests and enquiries on food, beverage and service. - Report to Manager on all complaints with action to be taken with regards to the guests as well as corrective steps to be made operationally to prevent the similar service breakdown from reoccurring. - Monitor all costs and recommend measures to control them. - Assist in identifying market needs for both, direct neighbors and the local market. - Assist in ensuring that each team member receives effective training programs. - Assist in the training of the wine team ensuring that they have the necessary skills to perform their skills to perform their duties with the maximum efficiency.
