About the Role:

As Chef De Cuisine at Citron, you will be responsible for leading the kitchen team, curating exceptional Vietnamese dining experiences, and ensuring the highest culinary standards. This role requires a true specialist in Vietnamese cuisine, with an emphasis on authentic Hanoi flavors and techniques.

Key Responsibilities:

• Lead the Citron kitchen team to deliver exceptional, authentic Vietnamese cuisine.

• Develop, refine, and execute a menu focused on traditional Hanoi flavors, while incorporating innovative presentations.

• Ensure consistent quality, taste, and presentation of all dishes, aligning with luxury resort standards.

• Train and mentor chefs to preserve traditional cooking methods while maintaining efficiency in a high-volume kitchen.

• Oversee kitchen operations, including food safety, hygiene, and cost control.

• Collaborate with the Food & Beverage team to create seasonal menus, special dining experiences, and unique culinary promotions.

Qualifications & Skills:

• Proven experience as a Chef de Cuisine or Executive Sous Chef in a luxury hotel or fine-dining restaurant.

• Expertise in authentic Hanoi Vietnamese cuisine, with a deep understanding of traditional techniques, ingredients, and flavors.

• Strong leadership skills to manage a complex kitchen operation while inspiring and developing a talented team.

• Knowledge of cost control, inventory management, and supplier relations.

• Ability to work in a fast-paced, high-pressure environment while maintaining exceptional quality.

• Passion for Vietnamese culinary heritage and a commitment to delivering world-class dining experiences.
