Duties and Responsibilities

 Able to advise the patrons according to their personal needs. It can be related to their taste, the food and wine pairing, the occasion or the budget.

 While considering the clientele and the food served, the wine captain ’s responsibilities also consist of selecting wines, creating drink lists and managing stock.

 Build and maintain a wine list fitting the establishment he or she works for: right price, products, presentations, easy to use..

 In charge for training on wine and other beverages by conducting tastings and attend external training.

 The wine captain needs to be able to pass on knowledge and train the other staff


 A wine Captain has to have knowledge of how wine is supposed to taste, using his or her expertise and education about grape varieties or regions along with harvest times, climates, soils and the overall winemaking processes.

 This in-depth understanding helps the wine Captain to answer a vast number of questions from patrons as well as industry partners.


 Ensures that minimum standards have been implemented.

 Works closely with other Outlet Managers in a supportive and flexible manner, focusing on the overall success of the company and the satisfaction of hotel guests.

 Ensures that Food and Beverage employees work in a supportive and flexible manner with other departments, in a spirit of “We work through Teams”.

 Assists in conducting monthly inventory checks on all operating equipment and supplies. Have a thorough knowledge and understanding of all food and beverage items in the menu and the ability to recommend Food and Beverage combinations and up sell alternatives.

 Ensures that the outlet is kept clean and organised, both at the front as well as the back of house.

 In the absence of Assistant Manager, conduct daily pre-shift briefings to employees on preparation, service and menu.

 Assist to liaise with the Kitchen on daily operations and quality control if appropriate.

 Be a hands-on supervisor and be present at all times in the Outlet, especially during busy periods.

 Assists with conducting monthly inventory checks on all operating equipment and supplies.

Customer Service

 Ensures the delivery of brand promise and provides exceptional guest service at all times.

 Handles all guest complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.

 Maintains positive guest and colleague interactions with good working relationships.

 Establishes a rapport with guests maintaining good customer relationships.


 Oversees the punctuality and appearance of all Food and Beverage employees, making sure that they wear the correct uniform and maintain a standard of personal appearance and hygiene, according to the company grooming standards.

 Maximises the effectiveness of employees by developing each of their skills and abilities through the appropriate training, coaching, and/or mentoring.

 Encourages employees to be creative and innovative.

 Ensures that all employees have a complete understanding of and adhere to employee rules and regulations.

 Ensures that employees follow all company and local rules, policies and regulations relating to fire and hazard safety, and security.

Other Duties

 Understands and strictly adheres to Rules and Regulations established in the Employee Handbook company policies concerning fire, hygiene, health and safety.

 Ensures a standards of personal presentation and grooming.

 Carries out any other reasonable duties and responsibilities as assigned.

Yêu cầu công việc

- Tiếng Anh lưu loát.
