To manage large stewarding team
- Knowledge of food handling and sanitation standards. Knowledge of basic sanitation controls and purpose and use of cleaning supplies
- Understanding of use and maintenance of kitchen dish room equipment. Understanding of Restaurant, Bar/Lounge, Room Service and Catering operational procedures
- Effective decision making skills and strong problem-solving skills
- Knowledge of overall hotel operations as they affect kitchen and related areas.
- Ability to effectively manage labour productivity
- Good presentation and platform skills. Good communication skills (verbal, listening, writing). Strong organization skills
- Ability to use standard software applications and hotel systems.
- Strong analytical skills.
- Effective conflict management and change management skills
- Strong customer and associate relation skills and good training/facilitator skills
- Knowledge of purchasing, inventory controls, supplies and equipment. Knowledge of governmental regulations and safety standards
- College or Bachelor’s Degree preferred
- Culinary Education preferred
- Certifications as required to comply with local and state codes
- 2 year experience at that same position at five star hotels.
