Techniques
- Produces and presents the dishes for the section in line with the cooking instructions and processes defined by the hotel and brand
- May be asked to carry out some food preparation in the dining room in front of guests, depending on events or how the F&B offer is organized
- Ensures that dishes are well presented, of a high standard and at the right temperature
- Delivers dishes in good time to suit guests' wishes
- Depending on the hotel, may be asked to receive deliveries, check and store merchandise
- Organizes his/her work and timing to suit fluctuations in guest numbers and special events
- Evolves working methods in line with brand philosophy
- Develops team spirit and motivation by creating a good working atmosphere
- Organizes and supervises the work carried out by commis chefs and apprentices in the area under his/her responsibility
- Informs the team about cost optimization and the reduction of raw material wastage; tracks implementation
- Trains commis chefs, apprentices and interns to a high standard
- Attends meetings and briefings for kitchen staff
- Has good working relationships with the other hotel departments
Hygiene / Personal Safety/ Environment
- Ensures that the workplace remains clean and the safety of consumable goods by always respecting HACCP regulations
- Respects the instructions and safety guidelines for the equipment used
- Applies the hotel's security regulations (in case of fire etc)
- Respects the hotel commitment to the "Environment Charter" (saving energy, recycling, sorting waste etc)
- Ensures that hotel SOPs are followed by self and subordinates
- Check refrigerator and Frozen at all times
- Aware of direction of the kitchen equipment and use them correctly
- Control and maintain the staff hygiene (hair, shaving, uniform)
- Ensure valid of all food items checked at all times
- Ensure all equipment is kept in good working order to avoid guest complaints and bad quality of food

Yêu cầu công việc
- Vocational School education
- Additional certification(s) from a reputable Culinary school will be an advantage
- Minimum 2 years of relevant experience in a similar capacity
- Good reading, writing and oral proficiency in English language
- Ability to speak other languages and basic understanding of local languages will be an advantage
