Mô tả công việc

SUMMARY:

We’re currently seeking for passionate and dynamic guest-focused professional F&B controller who pride themselves on their ability to deliver extraordinary levels of customer service and provide creative solutions to our company. As a Food & Beverage Cost Controller, you will responsible to liaise closely with the Food & Beverage Department on various operational and cost-related issues.


KEY ACCOUNTABILITIES:

-Food and beverage stock control in all bars and stores.
-Computer operations control in points of sales systems.
-Analysis of consumption data.

-B.O.M

-Outlet Manager


DUTIES & RESPONSIBILITIES

I/ Manage Deliveries and Monitor Inventory Usage:

Check orders on the receiving of goods to ensure the company is being charged properly and all procedures are followed correctly.

Ensure daily stock-takes in bars and give the required information to the Outlet Manager

Ensure all outlets have a sufficient amount of food and beverages to meet customers’ needs.

Control the food and beverage in terms of wastage, pilferage, and efficiency

Responsible for surprise spot checks at all F&B outlets.

Update and maintain receipts into the systems.

Participate in monthly departmental stock take activities

II/ Adjusting Costs and Prices:

Responsible for the short and long-term planning of the F&B controlling and pricing aspects.

Maintain an up-to-date products/spirits list of all costs/ prices from suppliers.

Follow up for the deal/promotion from suppliers and report to F&B Manager

Notify F&B Manager of any price changes and cost effect

III/ Prepare Analysis and Reports:

Prepare the daily/weekly and monthly cost report department about cost of sales.

Ensure up-to-date costing all food & beverage items and keep up-to-date records of all Food & Beverage monthly expenses to ensure strict budgeting control

Prepare monthly expenditure and monthly stocks balance report

Prepare variance analysis for food & beverage and communicate with outlet manager.

Coordinate with restaurant manager and finance to sort out issues about F&B.

Inform F&B Manager of all over-budget costs and discrepancies in procedures.

Continuously study weaknesses in F&B control implemented and provide suggestions for performance improvements.

IV/ Others responsibilities:

Cooperate with marketing team for promotion, menu, beverage costing, and price

Perform any other relevant duties and special assignments/ projects as they are delegated

REQUIREMENTS


I/ Education, Qualifications & Experiences:

-Bachelor of hotel management or accounting relevant.

-Knowledge of F&B cost controlling and computer literacy is a MUST, while knowledge of Opera, Micros, FBM, and SUN System is an asset.

-At least 2 years work experience in F&B Controller or related or senior administration having accountant skill

-Good verbal and written English communication skills.

They should have the ability to process information and merchandise through computer systems, coupled with the ability to work independently in a dynamic team while possessing the following additional competencies:
