Mô tả công việc

I. JOB SUMMARY

To ensure the smooth running of the Restaurant through achieving budgeted revenue, TripAdvisor and other results/ KPIs set for the outlet. This role involves the complete supervision of the Restaurant operations, including staff supervision and rostering, preparation of checks, stock control, and communication with relevant departments in the company. The Restaurant Manager is responsible for ensuring maximum guest satisfaction and maximum average check. To utilize current manpower control measures to meet and exceed budgeted manpower productivity. Work closely with Human Resources to ensure all training requirements are met and maintain a formal training program. Ensure staffing levels are sufficient to meet current levels of business activity.

The Restaurant Manager will be required to conduct their duties in a courteous, safe and efficient manner, in accordance with the company’s policies and procedures, ensuring that a high level of service is maintained.

II. JOB SPECIFIC TASKS

• Manage all F&B and day-to-day operations within budgeted guidelines to the highest standards of services.

• Ensure all food and beverage items served to guests are of the highest standard, and presentation is as per standards.

• Identify customer needs and respond proactively to all of their concerns

• Maximizes food and beverage sales by identifying and targeting sales opportunities through marketing including promotions and special events and by training staff on “up-selling.”

• Controls outlet’s costs of all food and beverage by assisting management, as requested, in purchasing, maintaining effective profit and loss controls and monitoring labor costs following demand patterns, budget and local labor laws

• Responsibility for effective recruitment, training and development, performance evaluation, turnover reduction and optimization of productivity through efficient work practices and staff rostering.

• Liaise with the Head Chef and kitchen to ensure efficient operation of the kitchen and quality menus are designed to suit the business and achieve budgeted food costs.

• Manage restaurant’s good image and suggest ways to improve it

• Manage TripAdvisor reviews for restaurants effectively and as per ranking target

• Analyze and respond to guest feedback, guest satisfaction and staff satisfaction information; and give a positive commitment to continuous improvement of product and performance.

• Ensure cleanliness of bar, tables, chairs, floor, general equipment and all back of house restaurant areas. Ensure sufficient equipment for the operations of the restaurant. Plan ahead for appropriate repair and replacement of damaged items.

• Preserve excellent levels of internal and external customer service

• Endeavored to conduct pre and/or post service meetings.

• Design exceptional menus, wine lists, purchase goods and continuously make necessary improvements

• Involve to establish targets, KPI’s, schedules, policies and procedures

• Provide a two ways communication and nurture an ownership environment with emphasis in motivation and teamwork

• Ensure compliance with sanitation and safety regulations

• Requisition general supplies as per policy and procedures, maintaining par levels.

• Report on management regarding sales results and productivity

• Assign staff to assist other restaurant if necessary.

IV. REQUIREMENTS AND QUALIFICATIONS

• Bachelor's Degree in Restaurant or Hotel Management or equivalent are advantage

• Proven food and beverage management experience

• Guest-oriented and service-minded

• Ability to work flexible hours, including nights and weekend

• Working knowledge of various computer software programs (MS Office, restaurant management software, POS)

• Ability to spot and resolve problems efficiently

• Mastery in delegating multiple tasks

• Communication and leadership skills

• Up to date with food and beverages trends and best practices

• Ability to manage personnel and meet financial targets

- 3-year experience in relevant position from professional working environments such as 5-star hotels, fine dining restaurants;

- Excellent customer service and management skills;

- Organizational and interpersonal skills;

- Problem-solving and decision-making skills;

- Commercial awareness;

- Experience in controlling service quality and operating cost;

- Proficiency in both English and Vietnamese;

- Good computer skills.
