Bar Supervisor (Mediterra Restaurant & Bar)

JOB SCOPE SUMMARY:

The Bartender Supervisor is responsible for overseeing daily bar operations, ensuring beverage quality, service consistency, and efficient team performance. This role supports the Bar Captain and Restaurant Manager in delivering a high-quality Mediterranean-inspired guest experience while maintaining operational standards, cost control, and compliance with company policies.

DUTIES & RESPONSIBILITIES:

1/ Guest Service & Beverage Quality:

• Ensure all beverages are prepared and served in accordance with Mediterra’s recipes and service standards.

• Actively engage with guests at the bar, providing recommendations on cocktails, wines, spirits, and food pairings.

• Support the handling of guest feedback and complaints related to bar service in a professional and timely manner.

• Ensure a friendly, attentive, and personalized service experience for all guests.

2/ Bar Operations & Supervision:

• Supervise daily bar setup, mise-en-place, operations, and closing procedures in line with SOPs.

• Monitor bartenders’ beverage preparation, garnishing, and presentation to ensure consistency.

• Ensure the bar area, equipment, and glassware are clean, organized, and fully operational.

• Maintain par stock levels for beverages, garnishes, and bar supplies.

• Report equipment issues, quality concerns, or operational challenges to the Bar Captain promptly.

3/ Sales & Cost Control:

• Promote upselling of beverages, signature cocktails, and ongoing promotions to maximize revenue.

• Assist in controlling beverage costs, minimizing wastage, and preventing stock losses.

• Ensure accurate recording of beverage sales and compliance with cash-handling procedures.

• Support stocktaking and inventory checks as assigned.

4/ Team Leadership & Training:

• Supervise bartenders and bar backs during assigned shifts.

• Support onboarding and on-the-job training for new bar team members.

• Assist in conducting pre-shift briefings to communicate daily specials, promotions, and product knowledge.

• Monitor staff grooming, uniform compliance, and hygiene standards.

5/ Compliance & Safety:

• Ensure compliance with HACCP, health, hygiene, and sanitation standards.

• Enforce responsible service of alcohol in accordance with local regulations and company policies.

• Assist in managing intoxicated or underage guests discreetly and professionally.

• Follow all safety, security, and operational policies of the restaurant.

• Strong knowledge of mixology, classic cocktails, Mediterranean-inspired beverages, and spirits.

• Previous experience as a Senior Bartender or Bartender Supervisor.

• Good leadership and team coordination skills.

• Strong guest service and communication skills.

• Basic understanding of beverage cost control and inventory management.

• Ability to handle guest complaints and operational challenges effectively.

• Good command of English; Vietnamese communication is an advantage.

• Ability to work under pressure in a high-volume bar environment.

• Flexible to work evenings, late nights, weekends, and public holidays.
