Chef de Cuisine - Japanese Cuisine

• To perform all types of food preparation in good production and performance. Guideline for staff communication and hygiene.
• Check all order food requested or ordered on a daily basis.
• Daily information with kitchen team and other kitchen areas.
• Sets up daily mise-en-place and rotation for food handling.
• Control and handle all equipment in accordance with safety procedure and coordinate withengineering for repairing.
• Sets up training programme and conducts classes in regard to preparation, and standards for all cold food.
• Keeps file of standard recipes and ensures adherence to the recipes.
• Keeps all assigned areas clean and in sanitary condition during his duty.
• Maintain the quality and presentation for all cold food and for any food event in other kitchen
• areas.
• Creativity for all menu suggestion in cold food section.
• Coordinate with Executive Chef for all menu, carte and promotion.
