• Tiếp nhận và xử lý các loại gia súc, gia cầm, hải sản (lọc xương, lạng da, chia phần bít tết, cắt lát...) theo đúng định lượng thực đơn.
• Lưu trữ bảo quản: Kiểm tra, sắp xếp và bảo quản nguyên liệu trong tủ đông, tủ mát đúng quy định vệ sinh an toàn thực phẩm.
• Kiểm kho: Kiểm tra chất lượng nguyên liệu trước khi giao cho các bộ phận bếp nóng/bếp nguội và báo cáo kiểm kê hàng tồn.
• Đảm bảo vệ sinh: Giữ gìn khu vực làm việc (thớt, dao, máy cắt thịt...) sạch sẽ, khử trùng đúng quy chuẩn cuối mỗi ca.

• Receive and process meat, poultry, and seafood products (deboning, skinning, portioning steaks, slicing, etc.) according to menu portion standards.
• Storage and preservation: Check, organize, and store ingredients properly in chillers and freezers in compliance with food safety and hygiene standards.
• Inventory control: Inspect ingredient quality before supplying to the hot kitchen and cold kitchen, and report stock inventory status.
• Maintain hygiene: Keep the work area (cutting boards, knives, meat slicers, etc.) clean and properly sanitized according to hygiene standards at the end of each shift
