1. Overall
The Assistant Chief Steward oversees all stewarding operations, ensuring the highest standards of cleanliness, hygiene, and kitchen support services across all outlets.
This role is responsible for maintaining efficient dishwashing operations, proper handling of kitchen equipment, and ensuring full compliance with food safety and sanitation standards. The position plays a key role in supporting smooth kitchen operations and upholding the resort’s luxury service standards.
2. Main Responsibilities
- Supervise daily stewarding operations across all kitchens and outlets
- Ensure all kitchen equipment, utensils, and operating equipment are cleaned, sanitized, and properly stored
- Maintain strict hygiene and sanitation standards in compliance with FSMS and local regulations
- Monitor dishwashing processes to ensure efficiency and minimize breakage and loss
- Control chemical usage and ensure safe handling of cleaning materials
- Coordinate with kitchen and F&B teams to support operational needs
- Conduct regular inventory checks for equipment and stewarding supplies
- Assist in budgeting, cost control, and minimizing wastage
- Train, coach, and develop stewarding team members to ensure performance standards are met
- Prepare duty rosters and manage manpower efficiently
- Ensure proper waste management and recycling practices
- Support in handling inspections, audits, and compliance requirements

Yêu cầu công việc
- Minimum 2–3 years of experience in stewarding or kitchen operations, preferably in a luxury hotel or resort
- Previous supervisory experience is preferred
- Strong understanding of hygiene, sanitation, and food safety standards (HACCP/FSMS)
- Good knowledge of kitchen operations and equipment handling
- Ability to manage a team and work under pressure in a fast-paced environment
- Strong leadership, communication, and organizational skills
- Hands-on, detail-oriented, and proactive approach
- Flexible working hours to meet operational demands
