- Inspect hygiene & make report & remind to all outlet - Prepare checklists for food preparation, storekeeper, cost control, stewarding, food production- Prepare checklists of cooking, storage and serving - Coordinate and follow up with all departments in all job assignment for all matters related to staff hygiene - Ensure that food samples are collected on a daily basis from kitchen, buffet, functions - Conduct regular tours of the house to ensure sanitation or disinfection of all critical surfaces and utensils-Control dry store food rotation - Control Food Safety Management System procedures and policies and evaluate correct sanitation actions-Brief and discuss hygiene issues with FB & KIT leaders - Monitor & plan food safety renewal for Kitchen & FB department - Investigate food incident execute preventive measure (if any) - Track system for control of supplier operating licenses and daily checklist temperature vehicle & quality goods - Investigate food incident execute preventive measure & update in case - Update hygiene issues in the week & brief the team at daily briefing - Weekly training schedule to involve food handlers to Food Safety training and evaluate of efficiency of training from chemical suppliers - Organize monthly FSMS team meeting, inform Hotel Manager/ Area General Manager aboutf food safety trend. - Monthly Food Safety Training Report - Participate in the supplier audit program by visiting the food supplier of the Purchasing Manager and carry out food safety audit within their promise (every 2 months) - Monthly Food Lab Test report - Evalution hygiene by internal audit for each outlet & summary score - Ensure compliance with the regulations, licensing conditions & codes of practices relating to food business of Ministry Health Viet Nam - Build up, implement, maintain and update the FSMS, HACCP system. - Attends meetings and trainings as required by General Manager - Coordinate with hygiene authority, attend workshops, and participate training programs require by local authority
