Mô tả công việc
1. To prepare all the special dishes and substitutes food.
2. To assist Chef de Partie with taste panels and menu classes.
3. To identify and discuss food production problems and figure out solutions with Chef De partie.
4. To check the quality and quantity and report any problems to the Chef de Partie.
5. To minimise food wastage by practicing First in First out (FIFO), dating, labeling and other sanitation instructions.
6. To make sure sections are set up properly and on time for each meal period.
7. To make sure that food is prepared by recipes designated by Chef de Partie / Sous chef
8. To fill out food production charts on a daily basis and pass on to the Chef de Partie for information and follow-up.
9. To fill out temperature charts daily.
10. To thoroughly follow and enforce the ‘Clean as you go’ policy, and keep work areas and fridge’s tidy at all times.
11. To assist in preparation of food items in other kitchen when required.
12. To ensure all food items for preparation and storage are in compliance with the hotel company guidelines and in compliance with the point checklist.
13. To provide On-Job-Training to Commis 1, 2, 3 and trainee.
14. To follow all kitchen regulations as outlined and directed.
15. To perform all other reasonable tasks assigned by the Chef De Partie, Sous Chef and Management.

Yêu cầu công việc
1. At least two years’ experience as a Commis 1 in a related cuisine in high volume five-star hotels.
2. Diploma in Culinary or equivalent required; Bachelor’s Degree as an advantage.
3. Certifications as required to comply with local and state laws.
4. Extensive knowledge of food handling and sanitation standards.
5. Eye for details.
6. Passion for service excellence.
