As an Executive Chef, you are in charge of:
- Manage all kitchen operations including Stewarding operations with an emphasis on maintaining hygienic standards and practices, staff training, and overseeing the preparation and presentation of a consistent food product that meets customer's expectations. Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.
o Manage all functions of the Food Production and Stewarding operations to achieve the optimum quality level of food production and sanitation.
o Recommend and promote new menu ideas and special food events
o Make recipes and maintains updated and accurate costing of all dishes prepared and sold in the Food and Beverage operation.
o Develop new dishes and products, develop and writes standard recipes.
o Take steps to ensure that outstanding culinary technical skills are maintained.
o Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly.
- Other Responsibilities
o Control and analyze, on an on-going basis, the level of the following: Costs, issuing of food, quality and presentation of food products, condition and cleanliness of facilities and equipment, guest satisfaction, marketing.
o Implement training plans for Food Production employees.
o Attend and participate in other meetings as required.
o Keep an up-dated Hotel Policies and Procedures file and up-dated files on the following Food Production matters: Recipes, finance, standards, personnel and Training, outlets, promotions, meetings, material and equipment, miscellaneous...
o Monitor local competitors and compare their operation with the hotel Food and Beverage operation.
o Work with Human Resources on manpower planning and management needs.
o Work with Accountant in the preparation and management of the Department's budget.
o Complete the other tasks and jobs assigned by the leader
o As our Executive Chef, you will be under the direct management of our General Manager.

- Probation time: 2 months
- Probation salary: Negotiate
- Contract salary: Negotiate
- When working in Phu Quoc:
+ 3 meals a day at canteen
+ Accommodation: A private room at staff house (without cleaning and laundry services)
Other benefits (only after probation):
- 13th month salary
- Healthcare insurance and social insurance as Vietnamese law
- 12 annual leave days/year.
Yêu cầu công việc
This position is open to both the Locals and the Expats
o Degree or Vocational Certificate in Culinary Skills or related field.
o Min. 3-5 Years in Hospitality Industry as an Executive Chef, Sous chef with experience is high reputation restaurant.
o Possesses work ethics that exude a high level of understanding of working with colleagues from different viewpoints, cultures and countries.
o Fluent in English.
o Good Communication and writing skills.
o Problem-solving, reasoning, motivating, organizational and training abilities.
o The capacity to work under extreme pressure
o Strong Leadership skills. Ability to manage complex relationships.
o Good understanding of useful computer programs (MS Office, restaurant management software, etc.)
