Position Statement
The Sous chef assist the Head Chef with meeting specific customer manages the kitchen and the staff and trainees that work in the kitchen in order to maintain customer satisfaction, quality, safety, hygiene and growth and development whilst providing a pleasant work and learn environment for the KOTO trainees. Together with the Head Chef the Sous Chef enginers menu’s that suit KOTO standards, the restaurant’s capacity, staff and trainee’s capability and financial goals.
Key results:
- Ensures the highest standards and consistent quality in the daily preparation and keeps up to date with the new products.
- Plan and present menu ideas
- Handle purchase orders and ensure that items arriving with high quality.
- Ensure efficient, cost-effective operation and profitability of food production fit with restaurant target.
- Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner
- Maintain standards for safe food handling, cleanliness and safety
- Mentoring and train the students when they practice at restaurant row.
- Promoting good image KOTO, KOTO goal, vision, mission to customers and trainees.
Specific tasks :
- Full awareness of all menu items, their recipes, methods of production and presentation standards.
- Manage all activities in the kitchen, including food preparation and production, and management and training of kitchen staff
- Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
- Assure adherence to all standards of food quality, preparation, recipes, and presentation in conjunction with the specifications
- Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met
- Assure kitchen personnel is trained in best cleanliness and sanitation practices
- Work with the Head chef to produce diversified menus in accordance with the restaurant’s policy and vision
- Come up with new dishes which appeal to the clients, whenever required
- Assist Head chef in all aspect of cost control and cost saving by doing stoke take and inventory every month/quarter/year and saving cost.
- Keep a sanitized and orderly environment in the kitchen
- Monitoring, guide and let trainees have chance to learn and practice
- Train to employees any menu changes, meal specials, or other factors that relate to service livery of the right people.
- Assume the role as Head Chef in his absence

12 ngày nghỉ phép, 6 ngày nghỉ ốm, hưởng BHXH & BHYT.
Thưởng tiền tip hàng tháng, thưởng hiệu quả công việc và tháng lương 13(tùy theo hiệu quả kinh doanh)
Yêu cầu công việc
- Have a least 1 year as Chef de parties experience
- Excellent record of kitchen and staff management
- Accuracy and speed in handling emergency situations and providing solutions
- Understanding of various cooking methods, ingredients, equipment and procedures
- Ability to use Word and Excel
- Team spirit
- Flexibility to work in shifts and willing to take initiative
- Sensitivity to and respect for cultural differences; understanding and awareness of diversity in the workplace.
- Diploma from a culinary school will be an advantage
