• Oversee daily butchery operations, ensuring the proper preparation, cutting, trimming, and portioning of meat according to hotel standards.
• Supervise and train butchery team members to maintain consistent quality and productivity.
• Ensure all meat products are handled, stored, and preserved in accordance with food safety and hygiene regulations.
• Monitor stock levels, minimize waste, and ensure proper utilization of ingredients.
• Coordinate with the Executive Chef and other kitchen sections to meet daily operational requirements.
• Inspect the quality and freshness of meat deliveries and ensure proper storage and stock rotation.
• Maintain cleanliness, sanitation, and safety standards in the butchery area.

• Previous experience in a Chief Butcher or senior butchery position, preferably in a hotel or resort.
• Strong knowledge of meat cuts, portion control, meat preparation, and storage techniques.
• Good leadership, communication, and team management skills.
• Knowledge of food safety, hygiene standards, and inventory control.
• Ability to work under pressure and maintain high standards of quality.
• Pre-opening hotel experience is preferred, and familiarity with the OPERA hotel management system is an advantage.
